Lamb Kebab PDF Print E-mail

This lamb kebab recipe is so good that it has become a weekly tradition in my house. We cook them up as appetizers or sometimes prepare them as the main course. After trying this recipe, you too will want to eat this seekh kebab on a weekly basis.

Ingredients

* 9oz. minced lamb
* 3 lg. cloves garlic
* 1 in. ginger root
* 1 egg
* 1 sm. green chili
* 2 slices bread, soaked in water for 1 min. then squeezed
* 2 tsp. garam masala
* 2 Tbs. chopped fresh coriander (cilantro)
* 1 tsp. ground roasted cumin
* 1/2 tsp. ground mace
* 1/2 tsp. grated nutmeg
* 1/2 tsp. ground red chilli powder
* oil for basting

Directions

Blend the lamb, garlic, ginger, egg and chili to a smooth paste in a blender or food processor. Mix in the bread and ground spices. Divide the mixture into 20 equal portions and shape into sausages. Push an oiled skewer through each one and shape the meat to a thin, round strip about 3 inches long. Rest the skewers on a tray about 7 inches below a preheated grill and grill (broil) until golden brown on all sides, turning occasionally. Serve hot for a full meal or as an appetizer.
