Also known as Hing, Ting and 'the food of the gods', asafoetida is a necessary and popular ingredient in traditional vegetarian Indian cooking.

 

Unpleasant when raw but lovely when cooked, this herb that comes from the fennel family and is a popular choice for its garlic-like flavor. It has been known to have medicinal uses for asthma and bronchitis and is also known to aid digestion.

Asafoetida comes from a sap extracted from the root of the Ferula Assafoetida plant. The sap is extracted from the stem. The root itself is used as a spice, and when heated with oil, the flavor develops into a taste that is reminiscent of onions or garlic. It has also been known to ward off symptoms of the dreaded flu.
