Often the Indian dessert, barfi, is referred to as Indian Cheesecake.
Ingredients
*1 lb. khoya *2/3 C. sugar *1/4 tsp. vanilla extract *2 tsp. cocoa *pink food coloring
Directions
Mix half the khoya with half the sugar in a saucepan and warm, stirring constantly, over low heat.
After 4-5 minutes, remove a small spoonful of the mixture and test to see if it forms a soft ball when molded between fingers. When mixture is ready, remove from heat and add vanilla. Stir for 1 minute. Spread mixture into a small cake pan and allow to cool.
Cook remaining khoya and sugar in the same way, but after switching off heat add cocoa and a few drops of coloring instead of vanilla. Stir for a little while, then spread evenly over vanilla mixture. Allow to set for 4-5 hours.
Cut into pieces and serve.
