Baked paneer is a very popular Indian dessert that is rich and delicious!
Ingredients
*5 C. milk *juice of 1 lemon *3-4 Tbs. sugar *1/4 tsp. saffron strands *a little milk *1/2 tsp. ground cardamom *1/2 tsp. grated nutmeg *4 almonds, blanched and sliced
Directions
Bring milk to a boil, stirring occasionally. Add lemon juice, remove from heat and stir gently until milk curdles and a bluish water floats on top.
Strain through a muslin-lined sieve, then hang paneer in muslin for at least 2 hours. Knead paneer thoroughly with sugar. Soak saffron in a little warm milk, then rub it in to dissolve strands.
Add saffron liquid and cardamom to paneer and mix well. Spread the mixture on a cookie sheet to give a thickness about 1/2-inch. Sprinkle nutmeg over and top with almond slices. Bake at 350 degrees for 15-20 minutes, then cut into pieces and serve hot or cold.
