Payasam PDF Print E-mail

This is a beverage that combines mangoes, saffron and cashew nuts. A true Indian stand-out!

 

Ingredients:

* 6 ripe mangoes
* 2 C. coconut milk
* 1/2 C. sugar
* 1/2 tsp. ground cardamom
* pinch of ground saffron
* 1 tsp. ghee
* 2-3 cashew nuts
* ice cubes

Directions:

Peel the mangoes, squeezing out and retaining the pulp. Add a little hot water to the mango stones and wash them clean of all pulp, then add this to the pulp with the coconut milk, sugar, cardamom and saffron. Heat the ghee in a separate pan and fry the cashew nuts for a few minutes. Add them to the milk mixture and serve cold with ice cubes.
