Cucumber Mint Lassi PDF Print E-mail

Often served in Indian restaurants as a mouth cooling accompaniment to hot curries. It also makes a delicious, light breakfast beverage. This one in particular has a clean tasting drink.

Ingredients

* 1 1/2 C. cucumber chunks, peeled and seeded
* 1 C. buttermilk
* 1/8 tsp. salt

Optional:
* 1 tsp. sugar
* 1 to 2 scallions, chopped
* 6 to 8 fresh mint leaves

Directions

Combine everything in a blender and puree until smooth. Serve cold - plain or over ice. Makes 1 to 2 servings.
