Baked Masala Vegetables PDF Print E-mail

I bet you never knew baked vegetables could taste so delicious!

Ingredients

*1 sm. cauliflower, lightly cooked
*4 carrots, cooked
*2 onions, chopped
*3 green chilies
*1/2-inch pieces fresh gingerroot, grated
*oil for deep frying
*12 sm. new potatoes
*1/4 C. butter
*1/2 tsp. chili powder
*1 C. peas, cooked
*salt to taste

Sauce:
*2 Tbs. butter
*1/4 C. all-purpose flour
*2 1/2 C. milk

Directions


Cut cauliflower into florets and cut carrots into long strips. Grind half the chopped onion to a paste with the chilies and ginger.

Heat oil for deep frying to 350 degrees, add potatoes and cook until golden brown. Drain on absrobent paper and set aside.

Melt butter in saucepan and fry remaining onion in it for a few minutes. Add paste and fry for an additional 1/2 minute. Stir in chili powder, cooked vegetables and salt to taste, then transfer mixture to an ovenproof dish.

To make sauce, melt butter in saucepan, stir in flour and cook, stirring, for 1 minute. Gradually pour in the milk and bring to a boil, still stirring. Add salt to taste.

Pour sauce over vegetables and bake in a hot oven (450 degrees) for 20 minutes or until browned on top. Serve immediately.
