Coconut Lamb Curry PDF Print E-mail

If you love coconut, you will be sure to love this coconut lamb curry. The tropical flavor makes this recipe perfect for summer dinners. Serve it with a side of white rice and steamed vegetables.


Ingredients

* 1 lb. boneless lamb, cubed
* 3 C. coconut milk
* 1 sm. cabbage, chopped
* salt
* 1 tsp. cumin seeds
* 1 tsp. ground cilantro
* 1 tsp. ground turmeric
* 1 tsp. black pepper
* 1/2 tsp. mustard seeds
* 3 cloves garlic, crushed
* 2 onions, chopped
* 1/4 C. grated coconut
* 2 Tbs. ghee
* 2 Tbs. wine vinegar
* 1 1/4 C. coconut cream

Directions

Place the lamb and coconut milk in a pan and simmer gently for 20 minutes or until the lamb is almost tender. Add the cabbage and salt and simmer while you roast the spices. Roast the spices in a dry pan and then grind them to a paste with the garlic, 1 onion and the grated coconut. Add to the pan with remaining onion, ghee, wine vinegar and coconut cream and simmer for 15 minutes until the lamb is tender and all the ingredients are thoroughly blended.
