This potatoes and peas dish is popular in North India.



Ingredients

*3 to 4 Tbs. oil
*1/2 C. finely chopped onion
*2 cloves garlic, minced
*1 C. chopped fresh tomato
*1/4 tsp. garam masala
*1/4 tsp. each cumin, turmeric and coriander powder
*1/8 tsp. cayenne
*1 tsp. salt
*1 lb. red or yellow potatoes, cut up into 1/2-inch cubes
*1 C. water
*1 1/2 C. shelled fresh peas or frozen peas, thawed and drained
*a few cilantro sprigs for garnish, optional

Directions

In heavy saucepan, heat oil over medium heat, and cook onion and garlic until light brown. Add chopped tomato and all the spices, including salt and saute for 5 minutes until ingredients form a well-blended paste. Add potatoes and fry for 2 minutes until well-mixed. Then add water, cover, and cook about 10 minutes. Add peas and stir-fry for 1 minute to mix ingredients. Lower heat, cover, and cook for additional 10 minutes.

Potatoes and peas should be cooked but not mushy. Garnish with cilantro, if you desire, and serve.
