Make this delicious vegetable dish during spring when asparagus is in season!
Ingredients
*2 C. asparagus stalks, cut into 1 to 1 1/2-inch long pieces after removing the thick ends *1 C. sliced mushrooms *1 C. sliced carrots *1 C. sliced zucchini or sunburst squash *1 Tbs. oil *2 Tbs. green garlic or scallions, chopped finely with its leaves *1/4 tsp. each sesame and cumin seeds *juice of 1/2 lemon *salt and pepper to taste
Directions
Trim off bottom part of asparagus stems. Set long stalks aside with other vegetables. Place oil in a frying pan and add the chopped green garlic, if available or the scallion, and fry for 1 minute. Add cumin and sesame seeds, and stir-fry for a few seconds. Then add the rest of the vegetables and fry for 5 minutes, stirring frequently. Cover and cook over medium heat for 5 to 7 more minutes, being careful not to burn vegetables. If vegetables look dry, add a few tablespoons of water, cover, and cook for a few more minutes. Add lemon juice and salt and pepper to taste. Stir and serve hot.
