Onion Bitter Gourd PDF Print E-mail

For a full meal your family will love, you can serve this onion bitter gourd hot or cold with paratha or puri, a lentil dish, rice and raita.


Ingredients

* 9 oz. bitter gourd
* 2 1/4 C. water
* 1 tsp. salt
* 5 Tbs. oil
* 4 sm. onions, thinly sliced
* 1 green chili, chopped
* 1 tsp. ground cilantro
* 1 tsp. ground roasted cumin
* 1 tsp. garam masala
* 1/2 tsp. ground red chili
* 1/2 tsp. ground turmeric
* salt

Directions

Scrape the bitter gourd, cut into 1/4 inch rounds and scoop out and discard the seeds. Bring the water to a boil with the salt then add the bitter gourd and boil for 1 minute. Drain and repeat 3 times. Leave to cool and squeeze out any excess water.

Heat the oil and fry the onion and bitter gourd over a medium heat for 25 minutes until golden brown and crispy. Stir in all the ground spices and cook over a low heat for 5 minutes.
