This south Indian-style cabbage will certainly surprise your taste buds with the tropical flavor of coconut. Be sure to serve immediately for best results.
Ingredients
* 1 white cabbage, finely shredded * 4 Tbs. mustard oil * 1 tsp. mustard seeds * 2 onions, chopped * 2 Tbs. fresh cilantro, chopped * 4 oz. shredded coconut * 2/3 C. coconut milk
Directions
Blanch the cabbage in boiling water for 3 minutes, then drain thoroughly. Heat the oil and fry the mustard seeds until they start crackling. Add the onions and fry until golden. Add half the cilantro, the coconut and the cabbage and stir-fry ingredients, gradually adding enough coconut milk to keep the mixture moist. Heat through thoroughly and serve immediately.
