Normally I am not a big fan of spicy vegetables but this spicy cauliflower recipe has changed my opinion. The spices blend perfectly, with a little kick left in your mouth after every bite.
Ingredients
* 1 cauliflower * 4 Tbs. ghee * 2 lg. onions, chopped * 1/2 inch ginger root, chopped * 4 cloves garlic, chopped * 3 dried red chilies * 1/2 tsp. chili powder * 1 cinnamon stick * 1 bay leaf * 2 green chillies, chopped * 4 cloves * 1/2 tsp. cumin seeds * 3 cardamom pods * 2/3 C. plain yogurt * 1 C. water
Directions
Heat half the ghee and fry the cauliflower until lightly browned. Transfer to a casserole dish and cover with onion, ginger, garlic, chili powder and spices. Pour over the yogurt and water and add the remaining ghee. Cover and cook in a preheated 350 degree oven for 45 minutes, until tender.
