Tomato Potatoes PDF Print E-mail

Tomato Potatoes are a family favorite in my house, mostly because we have so much fun saying it! This also makes a delicious mild side dish that everyone enjoys, especially when served with fried duck.


Ingredients

* 2 Tbs. ghee
* 1 onion, chopped
* pinch of ground turmeric
* 1/2 tsp. chili powder
* pinch of garlic powder
* 1 tomato, skinned and chopped
* 1 lb. potatoes
* 1/2 tsp. garam masala
* salt

Directions

Heat half the ghee and fry the onion until golden. Lower the heat and stir in the turmeric, chili powder and garlic. Add the tomato and salt and fry for 2 minutes, stirring. Add the potatoes, cover and simmer for 10 minutes, stirring occasionally and adding water as needed until the potatoes are cooked. Sprinkle with garam masala and the remaining ghee.
