Soy Cucumbers PDF Print E-mail

Soy cucumbers are a terrific healthy afternoon snack. This recipe is easy to make, perfect for an after school snack or served as a lunchtime salad for 4.


Ingredients

* 4 tsp. sesame seeds
* 1 cucumber, cut into chunks
* 3 Tbs. soy sauce
* 4 tsp. wine vinegar
* pinch of cayenne
* 1/2 tsp. cayenne
* 1/2 tsp. sugar
* 1 clove garlic, crushed
* 1 Tbs. sesame oil

Directions

Dry roast the sesame seeds until lightly browned. Place the cucumber in a bowl. Mix together the remaining ingredients, pour over the cucumber and leave to stand for 30 minutes to an hour. Sprinkle with sesame seeds before serving.
