| Crunchy Cabbage Salad |

This makes a lovely crunchy starter salad or side dish.
Mix together the coconut and cabbage, stir in the lime juice and chill. Heat the oil and fry the chili until dark in color. Discard the chili and then add the mustard seeds to the oil. Cover and fry for a few seconds until they start to crackle. Add the oil to the cabbage and toss together well. Chill before serving. |
