Coconut powder is one of my favorite spice mixtures! So rich and flavorful!
Ingredients
*1/2 coconut, grated (shredded) *2 Tbs. red lentils *2 Tbs. yellow split peas *1/2 tsp. asafoetida *8 dried red chillies *1 tsp. oil *salt to taste
Directions
Dry roast grated coconut until golden. Dry roast lentils and split peas for a few minutes. Fry asafoetida and chillies in oil until lightly browned. Grind all ingredients to a coarse powder, adding salt to taste. Store in an airtight container for 3-4 days. Serve with hot rice and ghee.
