Curry Leaves Powder PDF Print E-mail

Make your own curry powder from fresh curry leaves! You'll love the fresh taste of this spice!



Ingredients

*1 lg. bunch fresh curry leaves
*2 tsp. coriander (cilantro) seeds
*1 Tbs. black peppercorns
*1 Tbs. cumin seeds
*2 tsp. fenugreek seeds
*2 tsp. mustard seeds
*1 Tbs. split black beans
*1 Tbs. yellow split peas
*1 tsp. asafoetida
*2 Tbs. jaggery or sugar
*2 Tbs. tamarind pulp
*salt to taste

Directions

Dry roast curry leaves for 2 minutes then set aside. Roast the coriander seeds, peppercorns, cumin, fenugreek and mustard seeds, split beans, split peas and asafoetida until golden. Grind all ingredients to a fine powder, adding jaggery or sugar,m tamarind and salt to taste. Store in an airtight container.
